Manhattan Bar at Regent Singapore has launched a new food and cocktail menu that takes diners through the history of New York City’s iconic Manhattan district.

Regent Singapore‘s Manhattan Bar is known for many things – from winning awards such as Best Service Crew at The Bar Awards 2016 to listing on No.5 in Asia’s 50 Best Bars last year – but one thing that set it apart from other bars are the compelling stories spun around its food and cocktail offerings. Since its launch in 2004 Manhattan Bar has taken patrons on a culinary journey through the many different districts of New York City borough, starting from Harlem with its African-American influences and culminating in the calming oasis of Central Park.

This year though, it’s a whole different story. Manhattan Bar’s Philip Bischoff and his team worked closely with Regent Singapore’s chefs to present an almost entirely new menu that represents the different “Eras of New York”, encompassing some five eras through 18 food offerings and 20 delicious craft cocktails.

This means that patrons get to experience a wide swathe of culinary treats, starting with “European Exploration (1520s to 1730s)” when Dutch explorers first settled at the southern tip of Manhattan. Here they can opt for tipples such as the First Voyage ($25++), a strong spirit-forward concoction of fortified wine, gin, and port aged in a clay vessel for 2 weeks, and bites like Crispy Cod Brandade ($19++), an arancini-inspired risotto croquette with salted cod that comes with a squid ink and basil aioli.

Then there’s the “Industrial Revolution (late 1800s to early 1990s)” that charts the city’s rise through industrialisation. Fittingly there’s Coal ($24++), a beautifully hued tribute to what fuelled the industrial movement with notes that are chocolatey, winey, rich and strong.

You can’t discuss American history – especially when it comes to the country’s drink culture – without mentioning Prohibition, and here Manhattan’s “Prohibition (1919 to 1933)” looks at the speakeasy culture of cocktail innovation even as the country clamped down on alcohol consumption. There’s the 12 Mile Out ($24++), a strong Mai Tai-style tropical beverage of pineapple, curaçao, and rum named after the border off US shores where one is permitted to consume alcohol. Make sure you get a hold of the Ziti Pot ($18++), a creamy pasta dish inspired by Manhattan’s Italian immigrants.

Finally there’s the “City of Tomorrow (1950s)” and the “Golden Era (1990s)” both of which boast a promising future for New York City. There’s their version of the classic Jack Rose ($24++), and the TKH ($24++), a cocktail tribute to The Knickerbocker Hotel. For bites opt for the Brisket Roll ($22++), inspired by the Vietnamese cha gio spring roll but sees filo pastry wrapped around braised wagyu brisket and smothered with sriracha mayonnaise.

“What we have set out to do and always been focused on at Manhattan is to redefine classics, with our own twist. More importantly, we want to elevate and provide unique experiences for cocktail culturists who we play host to,” explains bar manager Bischoff.

Who says you can’t eat and drink history?
