Known as one of the pioneers in Singapore’s cafe scene since its introduction in 1999, PS.Cafe has now grown into a major F&B powerhouse with outlets scattered across the island. What’s also interesting is that PS.Cafe has over the years has put together a rather comprehensive portfolio of wines that would certainly appeal to wine enthusiasts. Earlier this year, PS.Cafe introduced a free-flow wine brunch at its Ann Siang Hill location during the weekends that may just change the concept of, well, weekend wine brunches.

Generally, free-flow wine offerings at F&B outlets are garnered towards moving as much volume as possible – you’re generally looking at pushing low cost wines that appeal to the widest possible spectrum of drinkers for that additional profit margin. And since the wines offered are picked largely based on price, there usually isn’t a particular theme or approach. Indeed a highly certified sommelier at a busy weekend free-flow wine brunch serves generally as a glorified waiter; few are interested in what she has to say.

But PS.Cafe’s recently introduced free-flow wine offerings on its Ann Siang Hill weekend brunch is presenting a range of wines from iconic Spanish vineyard Marques de Riscal, which allows revellers to experience different wines from a single producer as opposed to, let’s say, a Sauvignon Blanc from New Zealand, a Merlot from Chile, and a random unknown bubbly. Here you’ll get to try the red, white and rosé wines from the Rioja-based producer – the robust ‘Arienzo’ Tempranillo, vibrant Rueda Verdejo white and pale Rosado Rosé – which gives you a more complete picture of the vineyard’s terroir as well as the verve of the winemaker.

And with such different expressions you can still experiment with food pairings; try the sensual Rosado with PS.Cafe’s signature favourite of PS Crab & Prawn Laksa ($26++, above), while the crisp acidity of the Rueda Verdejo helps to cut through the richness of fried foods such as Tiger Beer Battered Fish & Chips ($32++).

This free flow wine option is available at the PS.Cafe Ann Siang Hill brunch for $70++ from 12pm to 3pm on Saturdays, Sundays, and public holidays; guests get to choose from the wines by Marques de Riscal, as well as Villa Sandi’s Valdobbiadene Prosecco. Food is paid for separately.
