Local speakeasy cocktail bar Ah Sam Cold Drink Stall has put together a set of four different cocktails that’s been inspired by – and uses as an ingredient – the beers of Singapore’s own gypsy brewer Brewlander & Co.
They say imitation is the sincerest form of flattery, but we think Ah Sam Cold Drink Stall just paid the ultimate compliment to Singapore’s craft gypsy brewer Brewlander & Co by making various beer cocktails inspired by their brews. Ah Sam Cold Drink Stall head bartender Ong Jun Han has concocted four special cocktails each of which highlights the distinctive flavours of a specific Brewlander beer style, complementing with a different spirit base as well as using local ingredients to reflect their origin.
There’s the Si Bei Hao Lian, which uses the Brewlander Pride – the saison-style ale has its floral and spicy notes enhanced by rum and lime juice, while gula melaka brings out some of the beer’s subtle bubblegum sweetness. It’s also a subtle, friendly jibe at Brewlander’s brewer John Wei, considered one of the best brewers of saison in Singapore, one that’s taken him from his home brewer days to going professional. Rasa Sayang on the other hands sees the Brewlander Love Wild IPA combined with gin to intensify its tropical flavours, and topped up with housemade tepache for a tall drink.
Mariyātai – Tamil for ‘respect’ – is a full-bodied cocktail that takes on the same characteristics of the porter of the same name; it’s mixed up with whisky, amaretto and Pedro Ximénez Sherry for bolder, more robust flavours. Then there’s Bold and Brave, taking on the Brewlander Courage DIPA by using gin and ginger to help bring out the herbal bitterness of the bitter ale.
“In recent years, the craft beer scene in Singapore has moved from nascent to speciality taprooms, from homebrew to microbreweries and local craft breweries. We wanted to pay tribute to the local craft beer scene; this is the only way we know how, in a cocktail,” says Ong.
These Brewlander beer cocktails are on the menu at Ah Sam Cold Drink Stall indefinitely.
