To say that we love our cognac is perhaps understating things. After all, the luxury spirit is a literal taste of time compressed and expressed. But of all the cognacs we’ve ever set lips to, LOUIS XIII is probably the very pinnacle of quality and decadence. And then we discovered a way to better savour LOUIS XIII – by pairing the cognac with similarly opulent offerings. LOUIS XIII Cellar Master Baptiste Loiseau and House Chef Philippe Saint Romas have devised five exceptional pairings that reveal the different sensations of LOUIS XIII.

They bring that exquisite experience to Singapore in collaboration with 28 Wilkie.

Conceived as pre-dinner delights – read: small portions- the pairings explore putting together the finest luxury produce with the complex flavours and aromas of cognac. There’s Kaluga Hybrid Caviar, whose briny saltiness enhances the cognac. Then experience how the sweetness of the shellfish in the European Lobster Sandwich brings out the spirit’s fruitiness. On the other hand the Hibiscus and Pomegranate Soft Sorbet cleanses out any inherent oakiness in the tipple to reset your palate.

We love how the sliver of ham in Wafer-Thin Belotta Shavings gives a fine oily character to round out the LOUIS XIII. Finally there’s the Wagyu Beef Tartare with Pommery, the spiciness of the mustard bringing out a surprising sharp bite in the cognac.

But this complex union of flavours doesn’t come cheap. It’s priced at $350 nett per head for just one glass of LOUIS XIII with the five pairings. And that’s before you pay for the rest of your dinner.
