Le Binchotan’s Jeremmy & Friends supper specials sees Chef Jeremmy Chiam partner up with his chef friends for the ultimate supper indulgence.

Supper is best had with friends; aside from sharing calories it’s a great way to catch up with one another on life outside of work. But chef-owner Jeremmy Chiam of modern French-Japanese bistro is holding a different supper with friends; he’s upped the ante on his previous supper specials and has invited some chef buddies to join him in creating some decadent supper options – many of them luxurious takes on hawker eats – on certain weeks in the month of April, May and June.

Collaborating with him for April is Chef ArChan Chan from LeVeL33. Chef Chan will be carrying over the modern European style of the brewery restaurant while paying tribute to local supper favourites; her Stir-fried Clams with XO Sauce is essentially our sambal lala but jazzed up with the use of LeVeL33’s blond lager, and served with mantous made from scratch with some spent grain from the brewery.

Then there’s her Grilled Shishito Peppers and Fermented Leeks with Hopped Salt, a yakitori-style appetiser good for chasing down drinks.

For the month of May, Sam Chablani, formerly head chef and co-owner of Fat Lulu’s, brings his signature Asian-style barbecue approach to Le Binchotan. His #noburnnotaste Platter of Fat Lulu’s iconic iberico pork satay, along with chicken wings, and Vietnamese-style phu quoc pork ribs will have you licking your fingers in delight. But his crunchy Vegetable Chips starter is also incredibly moreish and you’ll soon empty the bowl without even realising.

In June, the veteran chef Damian D’Silva  of Eurasion-Peranakan heritage restaurant Folklore makes his appearance alongside Chef Chiam. His Pork Belly with Cucumber Salsa will strike a familiar chord for those who grew up in Nonya households in the 80s, while his ubiquitous-sounding Steamed Fish is actually a masterful Teochew style take with housemade fermented soy bean paste and sprinkled generously with crispy pork lard. It’s a perfect accompaniment to porridge.

Speaking of which, Le Binchotan’s Chef Chiam will also be extending his own supper offerings. His Prawn Noodle Soup is a tasty hybrid of local Hokkien prawn noodle soup with Japanese-style Hakata ramen, while his ever-popular -and decadent – Hokkien Mee supper dish makes a return. Also available is his Kicap Manis Chicken Satay roasted on his binchotan grill, and his Beef Short Rib Dumplings takes the Chinese jiaozi and fills them with shredded Angus beef short rib for more oomph.

And for the perfect accompaniment with Chef D’Silva’s fish, you can’t go wrong with the ultra-decadent take on porridge with Chef Chiam’s Uni Congee.

If you’re feeling a little thirsty, LeVeL33 has specially made a yuzu beer for Le Binchotan that has citrusy notes, an assertive malt flavour and a restrained hop profile that should work very well for pairing with supper.

Chef Chiam’s dishes are available every supper weekend – Fridays and Saturdays, 9.30pm to 11.30pm – till end June.
