Pioneering French restaurant Les Amis and younger modern upstart Odette both land three stars in Michelin Singapore 2019.

If there’s one sign that Singapore’s dining scene is going from strength to strength, the stable of winners in the recently concluded Michelin Guide may just give a clue. For the first time in the Singapore edition of Michelin Guide since its introduction in 2016, two Singapore establishments have been awarded three stars in Les Amis and Odette.

Both long-standing fine dining classic French restaurant Les Amis, and Julien Royer’s contemporary French outfit Odette has won two stars every year since the inaugural edition before this year’s announcement. Singapore did not have a three-star awardee since Joël Robuchon closed down back in 2018.

Like last year there are five two-star award winners in the 2019 edition – Shisen Hanten, Shoukouwa and Waku Ghin all retained their two stars, and they are joined this year by contemporary French eatery Saint Pierre by local celebrity chef Emmanuel Stroobant and Nordic-Asian fusion concept Zén. The latter two replaces Restaurant André and L’Atelier Joël Robuchon, both of which shuttered last year.

There are 37 one-star winners this year, compared to 34 in last year’s edition. New entrants to the list are Basque Kitchen by Aitor, Restaurant JAG, Lerouy, Table65, Cheek Bistro, Meta, Buona Terra, and Vianney Massot, while Terra by Seita regains the star it lost since 2016. Crystal Jade Golden Palace dropped off the list.

“It is a real honour to be awarded my first Michelin Star here, my home for six years,” shared Chef Jeremy Gillon of Restaurant JAG, which wins its first-ever Michelin star for championing French Savoie-inspired author’s cuisine for barely a year since it opened in 2018. “We have taken a leap in attempting a concept that is unfamiliar. This Michelin Star is a reflection of our determination to keep food intriguing – even the humblest ingredient,” he added. This is Chef Gillon’s second star; the first was awarded to him in 2015 at L’Épicurien restaurant at Le Montana Hotel in Val Thorens, high in the French Alps.

“With two of its establishments promoted to a three-star ranking, Singapore is clearly positioned as a leading gastronomic destination,” said Gwendal Poullennec, International Director of the MICHELIN guides.

“Getting a three star is always a singular moment in a chef’s life and I am convinced that’s the same feeling for a city or a country. With this historic first, which completes an already extensive culinary scene, Singapore enters a new dimension to the eyes and palate of food lovers,” Poullennec adds.

While Michelin does not consider a restaurant’s drinks programme in its evaluations, many of the Michelin awardees have outstanding wine lists or cocktail offerings. The full Michelin Singapore 2019 list of awardees are:
