Michelin-starred Alma by Juan Amador looks to celebrate its 6th anniversary in style with a specially-curated tasting menu that will run for the month of September 2021.

If earning a Michelin star is difficult, keeping it for four consecutive years is an amazing accomplishment. Award-winning modern European restaurant Alma by Juan Amador has done just that in the six years since opening here in Singapore back in 2015. And for the month of September, Alma will celebrate its anniversary with a special menu that promises to be as creative as it is nostalgic.

Homeborn Chef Haikal Johari – who was in 2016 hand-picked by Chef Juan Amador to head Alma’s kitchen – will be presenting a 5-course and an 8-course tasting menu that is his personal culinary tribute to his mentor. Each of the whimsical dishes in both tasting menus will combine his interpretation of Chef Amador’s signature style and techniques with top-quality ingredients from around the world – uni, Hokkaido scallops, caviar, carabineros red prawn, among others.

Dishes include “Iced Buerre Blanc”, a Chef Amador signature. This buerre blanc ice cream concoction comes with a whole sous vide oyster that’s topped with Russian Osetra caviar and cloaked in foam. There’s a strong Japanese influence at play here as well. For example we have the Swordfish “Toro”, a textural gastronomic delight with expertly sliced cured swordfish interspaced with apple and cucumber and topped with creamy Bafun uni. We particularly enjoyed the King Crab from the dinner-only 8-course menu. Here the briny crustacean flesh is mixed up in a silky mousseline that has its flavours lifted by a tangle of fresh micro herbs.


Alma by Juan Amador was recently named by Tripadvisor as one of Singapore’s top fine dining restaurants in its Travellers’ Choice Awards 2021.

But the absolute highlight of the Alma anniversary tasting menu is the Mieral Pigeon. Chef Haikal pays absolute respect to the Bresse AOP poultry with his perfect execution, delivering tender pieces of pigeon breast with a Japanese curry spice crust tinted purple with hibiscus ink. It comes with a side of beautifully roasted pigeon leg too.

The Alma by Juan Amador 6th anniversary tasting menus are available from 1 to 30 September 2021. The five-course tasting menu is available for lunch and dinner at the price of S$198++ per person, while the eight-course tasting menu is available only for dinner at S$298++ per person. Each order of the anniversary tasting menu comes with a complimentary glass of Pierre Paillard “Les Parcelles” Bouzy Grand Cru Extra Brut champagne. Optional wine pairing is also available at an additional S$118++ (four glasses) for the five-course menu, and S$138++ (seven glasses) for the eight-course menu.
