Cocktail lounge Republic at The Ritz-Carlton, Millenia Singapore has unveiled a Sunday punch brunch offering three different punch bowls and a slew of its signature cocktails.

Retro ’60s-themed cocktail lounge Republic at The Ritz-Carlton, Millenia Singapore has launched a new weekend brunch experience for seasoned and aspiring cocktail-loving bon vivants. Unlike the usual Mimosas and Bloody Marys as can be expected at most weekend cocktail brunches, the Republic Sunday punch brunch shines the spotlight on punch.

And not just any punch. You’re looking at three distinctly different punches, all of which have been approved by bartender and drinks historian David Wondrich. Wondrich is a published author of many cocktail books including “Punch: The Delights (and Dangers) of the Flowing Bowl” and “The Oxford Companion to Spirits and Cocktails“, which makes him the perfect authority for Republic’s team to consult and collaborate with.

The punch is considered as the earliest cocktail. It’s usually served in a large bowl for communal drinking, combining any kind of spirit, citrus, sugar and spices into a beautiful balance. Republic has three communal-style punch bowls on its regular menu – the Michter’s straight rye whiskey-based Paul Jones Punch, gin-based Straits Gin Cup, and the Captain Dampier’s Rack Punch, made of Ceylon arrack and stiffened further with cognac.

For the Republic Sunday punch brunch, these signature punches come free-flow. There are a couple of clarified English milk punches too you can also avail yourself to, including the Timeless Beauty on Republic’s regular cocktail menu.

But if you tire of punches, there are other cocktails to choose from. You can still opt for a Bloody Mary or a refreshing Sunday Spritz if you so desire. Republic’s previous iteration Chihuly Lounge was famous for its coffee-based cocktails; the Espresso Martini and Irish Coffee here are, unsurprisingly, absolute divine.

As for eats you get to opt any three appetisers, one main course and dessert, from an eclectic gastronomic spread. Appetisers include options like British Prawn Cocktail, Foie Gras Terrine, Tossed Seafood Salad, and Chilled Heirloom Tomato Soup. For main courses there are brunchier dishes such as Soft Cheese Omelette and Eggs Benedict, but also heartier choices such as Braised Beef Short Rib, Roasted Chicken Breast, and even a Hainanese Kurobuta Pork Chop.

“There is no quicker way to bind a group of people together in friendship than to gather them around a bowl of real punch,” David Wondrich once declared.

At the Republic Sunday punch brunch, prepare for some proper bonding.
