The new Raffles Courtyard Hawker Stories will see the Raffles Hotel alfresco lounge spotlight iconic hawkers from 16 March to 29 May 2022.

Following Raffles Courtyard’s successful series of culinary pop-ups featuring various popular private dining chefs such as Shen Tan of Ownself Make Chef and PasirPanjangBoy duo Tinoq Russell Goh and Dylan Chan, the Raffles Hotel Singapore alfresco lounge has turned its attention back again on Singapore’s iconic hawker fare. It has worked with local food company Makansutra for Raffles Courtyard Hawker Stories, a series of four limited-time culinary pop-ups from 16 March to 29 May 2022 by beloved hawker stalls that were shuttered during the pandemic.

Each of the hawkers in the Raffles Courtyard Hawker Stories were specially curated by Makansutra, both to highlight their unique take on popular hawker specialties but also the homegrown culinary talents behind them.

The first instalment of Hawker Stories will see chef-owner Pasha Siraj of former hawker stall Luckmeow – which shut its doors in September 2021 – offer up modern Indian specialties. There’s MasalAglio Olio, a spicy mee goreng twist on the classic Italian pasta dish, and Pan-seared Butter Chicken, a playful hybrid of Hainanese-Western chicken chop meets murgh makhani. You can end your meal with Sweet Dosa, a lovely dessert take on the beloved Indian breakfast staple of masala dosa.

Following Luckmeow will be chef and hawkerpreneur Hady Jay of Mr Tersmell, whose specialties include traditional Malay delicacies Pulut Kuning and Pulut Hitam; veteran hawker David Lim, the grandson of the renowned Hock Lam Beef Noodle founder and owner of Empress Place Teochew Beef Kway Teow; and Darren Teo and Henry Yap of specialty fusion hawker stalls Seafood Pirates and Yap’s Noodles respectively, which were shuttered during the pandemic lockdown.
