Wildfire Burgers partners private dining chef Annette Tan of Fatfuku for the Fatfuku Cheeseburger, available exclusively this month of August.

Casual burger bar Wildfire Burgers makes some of the most fun burgers we’ve ever set to mouth. Particularly their monthly seasonal offerings – for example there was that absolutely tasty Forest Mushroom Cheeseburger as well as that insane budae jjigae-inspired Korean Army Stew Burger, both of which were introduced for a limited period last year.

Its latest seasonal creation? A collaboration with Annette Tan of Fatfuku fame. For those not familiar with Annette, the private dining chef is not only a proponent of Peranakan and Eurasian cuisine but also a well-established food writer and author of various food-related books such as ‘Savour Chinatown: Stories, Memories and Recipes’.

Their burger is the Fatfuku Cheeseburger. It takes the usual Wildfire cheeseburger – consisting of a wagyu beef patty and American cheese sandwiched in a sweet and fluffy brioche bun – but smacks on a chilli padi beef cheek marmalade that is Annette’s key contribution. The marmalade is Snake River Farms wagyu beef cheek that Annette lovingly braises and renders down with chilli padi, kicap manis, and dark soy sauce – among more secret other ingredients – into a gooey yet meltingly-tender mess. This is then spread atop the smoky beef patty, and layered with fresh coriander pesto, spicy sambal belachan mayonnaise, as well as shredded kaffir lime leaves.

The result is a lip-smackingly delicious burger that’s an explosion of flavours all of which are familiar yet very intriguing together. Some say the beef cheek marmalade tastes like rendang; for me it’s more a Southeast Asian version of a classic American chili.

The Fatfuku Cheeseburger is probably our favourite Wildfire Burgers collaboration yet.
