SUSHISAMBA towers high in the heart of the central business district of Singapore with its multiple-cuisine dining concept and party vibes.

As an industry observer it somehow seems to me – despite the challenging headwinds which continue to buffet Singapore’s beleaguered F&B scene – that there’s always a new high profile opening every month in the Lion City. Among the latest to recently and optimistically open in Singapore is SUSHISAMBA, an offshoot of a highly successful concept by Dubai-based hospitality empire, Sunset Hospitality Group (which also operates fine dining Chinese restaurant MOTT32 in Marina Bay Sands).

Perched on the 52nd floor of Capital Tower in the beating heart of our financial and business district, multi-concept SUSHISAMBA brings a different kind of high-energy vibe to Singapore’s F&B scene that it likes to call fun dining.

You’ll instantly feel the energy as soon as you enter.

Stunning interiors of - and outside view from - SUSHISAMBA Singapore atop Capital Tower.

At least once you find your way there.

The problem with being located on the uppermost floors of one of Singapore’s tallest commercial buildings? Having to navigate building security, traipse through multiple lobbies, and transferring to different lifts, just to get to your lofty destination.

But it’s all worth it.

SUSHISAMBA Singapore is a stunning venue. You’ll gawk, for example, at the very impressive bamboo weaved ceiling structure overhead, while a lush verdant wall of green flanks the space opposite soaring floor-to-ceiling windows offering one of the best views of the city. Bold red furnishings offer pops of colour, while a gilded dining counter separate eager diners from an open-concept kitchen.

And instead of one singular cuisine, it offers three. The menu at SUSHISAMBA Singapore is a combination of Japanese, Brazilian, and Peruvian cuisines. But this is not fusion food – nor is it that Japanese-Peruvian hybrid known as Nikkei – as SUSHISAMBA will be keen to remind you.

Here you’re looking at flavours that are as authentic to their cultures as possible, except that you can pick dishes from these different cuisines for your meal at the same time.

SAMBA Chilli Crab is a hat tip to Singapore Chilli Crab in sushi roll form.

So there’s nothing stopping you from starting with, for example, some juicy Japanese A5 Wagyu Beef Gyoza, and followed by Peruvian Corn Salad.

Desire some sushi rolls? They have those too – the Bahia, for example, is what we know as the ‘dragon roll’ with shrimp tempura, crab, tuna and avocado, while the Samba Chili Crab is a twist inspired by the quintessential Singapore dish. Or you can luxuriate on some piquant Peruvian ceviche – pick from Sea Bass, Salmon, Seabream, and more – or some Brazilian antichucos such as Chicken, Angus Beef Tenderloin, or Eggplant – all designed to cater to as wide a palate as possible.

And as wide a customer base as possible. The business lunch menu is incredibly popular at SUSHISAMA Singapore with the corporate set, we hear, while the evenings turn all cosy and romantic attracting those on trysts, or tourists hankering for the perfect night view of Singapore’s skyline.

Upstairs, the newly opened SAMBAROOM hidden on an upper floor loft is set to be a high-energy party venue with its live music or DJ sets, and even comes complete with a cocktail bar.

But we’ll have to come back again for that. And hopefully soon.
