Andaz Singapore’s “Voyage to Chinese Vineyards” returns this December for its second edition with three dining experiences that celebrate innovative winemaking in China.

China’s burgeoning winemaking scene continues to make inroads in the global wine landscape, and Andaz Singapore is set to explore this new wine frontier this December with the second instalment of “Voyage to Chinese Vineyards”, a series of exclusive dining experiences that shines the spotlight on some of China’s emerging young winemakers.

Following a successful inaugural debut earlier this year, the latest edition of “Voyage to Chinese Vineyards” puts together three wine-pairing dining events set within the elegant interiors of Andaz Singapore’s signature Chinese restaurant 5 on 25 – a dim sum lunch and two dinners – across this month.

At the helm of this year’s program is Meiyu Li (pictured below), the first female sommelier in mainland China to achieve Advanced Sommelier accreditation. Li brings unparalleled expertise and passion to these events, introducing wines from eight innovative China wineries spanning its key winemaking regions like Ningxia, Yunnan, and Hebei.

8 December – Dim Sum Meets Natural Wines

The journey that is “Voyage to Chinese Vineyards” will begin on 8 December, coincidentally ‘Flower Day’ on the biodynamic winemaking calendar, which is an entirely appropriate and auspicious for a dim sum luncheon paired with natural wines. Featuring 10 natural wines from renowned winemakers Orange Li (Gloriville) and Ian Dai (Xiaopu), this wine lunch explores China’s own unique approaches to natural winemaking.

Expect a tantalizing six-course menu, where dishes like the luxurious Dim Sum Garden — featuring Shrimp & Crab Dumpling with Oscietra caviar — and the Baked Chicken & Yunnan Mushroom Puff Pastry are paired with nuanced natural wines. Highlights include bold selections from Huailai, Ningxia, and more, each offering a glimpse into the growing art of natural winemaking in China.

10 December – An Evening with China’s Young Visionaries

Then there is a wine dinner on 10 December, where you’re invited to immerse yourself in a lavish eight-course dinner spotlighting the creativity of five dynamic winemakers: Gavin Cui (Purple Mist), Martin Jiang (Jiangyu), Max Ma (Xingguang), Shiping Quan (Zaxee), and Jie Ma (Petit Mont).

This one-night only event presents nine wines, including a Traditional Method Blanc de Blancs NV Brut from Beijing and the Zaxee 2560 Cabernet Sauvignon Blend 2020 from Sichuan. Each wine reflects the individuality and global perspectives of its maker, creating a compelling narrative of China’s winemaking evolution.

To go with these expressive wines will be exquisite dishes from the kitchen – helmed by Executive Chef Martin Satow and 5 ON 25’s Head Chef Lim Hong Lih – such as Double-Boiled Grouper Soup with Fish Maw and Wolfberries, Wok-Fried Australian Lamb Tenderloin with Kampot Pepper, and Claypot Baked Jasmine Rice with Braised Abalone.

These pairings have been carefully curated to perfectly showcase the harmonious interplay of bold culinary techniques and the nuanced profiles of the wines.

December 12 – Xige Winery Takes Center Stage

Concluding the series is an intimate dinner celebrating Xige Winery, one of Ningxia’s leading wine estates. Established in 2017, award-winning Xige combines contemporary techniques with traditional practices to craft wines of exceptional quality.

The menu includes luxurious dishes such as Braised Superior Bird’s Nest Soup with Sri Lankan Mud Crab Meat, Wok-Fried Boston Lobster with Sarawak Peppercorn, and Braised Stuffed Sea Cucumber with Yunnan Mushroom Sauce. Paired with wines like the Jade Dove Single Vineyard Cabernet Gernischt 2020 and Xige Estate 2017, this evening offers a sensory journey through Ningxia’s storied terroirs.
