Most devotees of Cantonese cuisine may know Wah Lok better for traditional dim sum, but the flagship Chinese restaurant at Carlton Hotel Singapore also dishes up an impeccable repertoire of time-honoured, authentic Cantonese dishes that celebrate heritage and tradition. Which, of course, is exactly what you want for Lunar New Year.
This year Wah Lok has again curated eight different Lunar New Year menus to suit different preferences and family sizes. For example the ‘Happiness’ menu, which caters for 8 to 10 people, starts off with the restaurant’s signature Hamachi Soon De Yu Sheng, a refreshing departure from the usual salmon or jellyfish varieties of that auspicious seasonal dish perfect for tossing to good health and fortune. This will be followed by other time-honoured dishes such as Steamed Soon Hock with Tangerine Peel, Double-boiled Shark’s Fin with Sea Whelk & Chicken, and Braised Whole Abalone, Dried Oyster, Black Moss, Vegetable, all of which will satisfy even the most demanding family matriarch.
But if you prefer to celebrate the occasion in the comforts of your own home, Carlton Hotel Singapore also offers an extensive array of festive takeaway options such as Buddha Jumps Over The Wall, Longevity Poon Choi, Roast Duck, and a whole lot more.

Golden Peony at Conrad Centennial Singapore
Another bastion of Chinese culinary excellence is Golden Peony, which has been serving up dependable and absolutely sumptuous Cantonese dishes for over two decades at Conrad Centennial Singapore.
This year Chinese Executive Chef Ku Keung at Golden Peony has unveiled six thoughtfully curated banquet menus – along with a la carte options – for the Lunar New Year season, with dishes that honour festive traditions and Chinese culture yet with a brush of contemporary flair. Start your convivial celebrations with a touch of opulence with Fortune Gold Flakes Yu Sheng, which elevates the quintessential start to any CNY meal with a joyful medley of luxurious ingredients that includes lobster, baby abalone, crispy whitebait, hokkigai, fish skin, and fresh fruit. Another standout offering? The Lobster Combination, which sees the prized shellfish served up in two ways – stir-fried with Chinese celery and black truffle, and also steamed to perfection with fluffy egg white, enrobed a rich Chinese wine broth, and then topped with Oscietra caviar. And no true celebratory feast will be complete without Roasted Suckling Pig; Golden Peony’s version even comes stuffed with glutinous rice, abalone, sea cucumber, and fish maw.

Hai Tien Lo at Pan Pacific Singapore
If you’re looking to celebrate Year of the Snake early, Hai Tien Lo has you covered. The award-winning Cantonese restaurant at Pan Pacific Singapore sees its Executive Chinese Chef Ricky Leung and his culinary team present a selection of eight different Lunar New Year set menus for our gastronomic pleasure.
Each of these sets come with a colourful and indulgent Yu Sheng platter to kickstart the year in proper style. What we particularly love about the yu sheng here at Hai Tien Lo? The ability to add optional accompaniments to elevate the seasonal dish even further, ranging from Boston lobster and whole abalone to Hokkaido scallop and smoked Norwegian salmon.
And depending on the set you opt for, highlights can include the likes of Braised South African Whole Abalone with Truffles and Crispy Sea Cucumber, Sautéed East Spotted Grouper Rolls with Seasonal Greens in Signature Homemade XO Chilli Sauce, as well as Stewed Inaniwa Udon with Lobster, Dried Scallops, and Superior Stock or Stewed Hong Kong Egg Noodles with Lobster and Honey-glazed Iberico Pork in Egg Gravy Sauce.

For a more contemporary approach to Chinese cuisine this Year of the Snake, consider 藝 yì by Jereme Leung. Chef Jereme Leung’s playful interpretation of Chinese cooking draws inspiration from all corners of China, exploring the country’s regional culinary differences as well as myriad of ingredients and cooking techniques for his own unique style.
For this coming CNY season, 藝 yì by Jereme Leung aims to regale revelling guests with an array of festive menus that puts time-honoured provincial Chinese delights – with Chef Jereme’s special twists – front and centre. Dishes include less common specialities such as Poached Squid with Arrowhead, Black Moss, Ginger & Scallion Sauce, Double-boiled Wild Red Mushroom, Dried Scallop & Fish Maw Soup with Abalone, Steamed Spotted Garoupa with Chicken Essence, Luffa Melon, Cured Meat & Shao Xing Wine, or Steamed Green Asian Lobster with Yellow Pepper Sauce. As for dessert you’ll definitely want to save space for seasonal specials such as the Deep-fried “Nian Gao” with Golden Pumpkin & Yam, and Homemade “Yuan Bao” Water Chestnut Cake with Nostoc Pearl.

Summer Palace at Conrad Singapore Orchard
We’ve always loved the exquisite Cantonese fare at Conrad Singapore Orchard‘s Michelin-starred Summer Palace, and this Lunar New Year is even more reason to visit as Chinese Executive Chef Liu Ching Hai unveils an entire collection of celebratory menus for the occasion.
The dishes in each festive menu has been designed to honour Chinese tradition, all of which feature premium and prized ingredients symbolising ideals of abundance, prosperity and harmony. Toss off to a good year of luck and fortune with the abalone- and jellyfish-topped Prosperity Yu Sheng, followed by elegant courses including Double Boiled Ginseng Soup with Fish May and Bamboo Pith, Stewed Pork Leg with Sea Cucumber and Sea Moss, and Steamed Stuffed Sea Cucumber with Seafood Paste.
Or if you prefer to celebrate from home, Summer Palace’s “Prosperity At Home” takeaway menu offers a sumptuous selection of artisanal festive treats and expertly prepared sets, available with island-wide delivery or takeaway.
