Tiffin Room at Raffles Hotel Singapore is set to host its much-anticipated Tandoori Festival this month to celebrate the art of tandoori cooking.

If you love your tandoori cuisine, you’re in for a treat. From 13 to 26 January, celebrated North Indian restaurant Tiffin Room at Raffles Hotel Singapore is again presenting its annual Tandoori Festival, a much-anticipated culinary event that pays tribute to the ancient art of cooking with a tandoor.

For a period of two weeks, Chef de Cuisine Kuldeep Negi of Tiffin Room will put front and centre the beloved cylindrical clay oven with origins that can be traced back to the ancient Indus Valley civilisation at the heart of an exquisite, carefully-curated multi-course menu.

Tiffin Room’s Tandoori Festival promises to be a fiery feast of epic proportions, showcasing the versatility and depth of the North Indian cuisine using the traditional oven with a spread of succulent meats, fresh seafood, and vibrant vegetables imbued with the tandoor’s signature smoky aroma and flavours.

Diners will begin their culinary adventure with Bhatti Ki Macchi, a delicate reinterpretation of a traditional tandoori dish that features premium black cod as the star, its creamy richness balanced by a tangy papaya murabba chutney and a hint of smoked spice.

The main course offers a selection of tandoori delights that range from Tandoori Malai Crab – featuring fresh crab that’s marinated in cheddar and yogurt and then given the tandoori treatment – to Highway Murgh Tikka of chicken kebabs simmered in aromatic spices. Then there’s the Malabar Lamb Boti, which sees succulent lamb grilled to perfection with Malabar spices that you eat with flaky Malabar paratha.

Vegetarian options include Bhatti Ki Galouti of spiced vegetable patties, vegetable Makai Aur Mattar Seekh kebabs served with spiced jackfruit naan, and Highway Paneer Tikka, the curd cheese version of its non-vege chicken kebab counterpart.

Alcoholic pairing options are available.

The Tiffin Room Tandoori Festival will run from 13 to 26 January 2025 and is available for both lunch and dinner at a price of S$145++ per guest ($125++ for vegetarian), and optional alcoholic beverage pairing at an additional S$98++.
