Japanese sushi restaurant Ashino will be holding a special sushi and Japanese craft beer pairing session as part of Singapore Craft Beer Week on Saturday 24 October 2015 at 7pm.
Ashino master sushi chef Takano Ashino’s specialty is Jukusei Sushi (熟成寿司), or aged sushi, which is a style which relatively few sushi chefs have mastered. Essentially, specially selected exceedingly fresh fish is flown in daily – employing a special technique of using needles to kill the nerves of the fish to keep it in a state of suspended animation, and ensures that it’s fresher than even regularly flown in (but dead) fish – and then aged for the best umami flavour to go with sushi rice.
Chef Ashino will present a very personal and unique omakase experience pairing his jukusei sushi with five types of Hitachino Nest beer from Kiuchi Brewery of Ibaraki.
