For this dinner, Blackwattle head chef Joeri Timmermans will be working together with renowned mixologist Boris Ivan for an evening featuring an hour-long complimentary cocktail tasting from 7pm to 8pm followed by a special 3-course menu. Chef Joeri has designed a special menu to complement the botanical flavours of the gin including cinnamon, angelica, bergamot and gardenia. The menu includes Spencer Gulf prawns with salted egg yolk butter, preserved lemon and horseradish as the entrée, David Blackmores wagyu rib cap with celeriac, grapefruit and kampot pepper for the main course and jackfruit custard with oxalis flowers to finish off the gourmet experience.
