Ding Dong x Aux Deux Amis will see Ding Dong host Aux Deux Amis from Paris for two nights only on 27 and 28 November 2019 for a special six-course wine-pairing dinner.
Modern Asian restaurant Ding Dong will see Chef Matthieu Perez of Aux Deux Amis join forces with its head chef Miller Mai to create a six-course dinner that will combine big, bold Southeast Asian flavours derived from indigenous ingredients such as buah keluak and som tam, with the best of Parisian bistronomy and savoir faire. Dishes include the likes of a Spiced Squid Tartare, Herb Sauce; Grilled Red Snapper, ADA inspired Asian Beurre Blanc; Brasied Beef Cheek, Buah Keluak Sambal; and Chicken Liver, Pickle Green Papaya.
And as can be expected from one of Paris’ most rambunctious natural wine bistros, the night will also see natural wine paired with the meal. Natural wine expert Eduardo Bayo of pop-up natural wine bar Drunken Farmer will serve up a wine-pairing selection curated from an arsenal of over 90 natural, organic, biodynamic and sustainably-farmed labels sourced straight from winemakers all around the world. Tying it all together will be ADA owner David Layola, who will play the role gracious host on both evenings, making sure no glasses go dry or plates untouched, wooing guests with his neo-bistro charm.
