Manhattan at Regent Hotel Singapore ties up with Michelin-starred Braci for its first culinary-inspired Friends of Manhattan Series.
What happens when a multi-award winning cocktail bar partners a Michelin-starred restaurant? You can find out on Tuesday 23 March 2021 when Manhattan at the Regent Hotel Singapore hosts Braci for an exclusive one-night only kitchen takeover.
And while Manhattan has hosted many bars from around the world for guest shifts as part of its Friends of Manhattan Series of events, this is the first time they’re hosting a top chef from outside of Regent. It kicks off its culinary collaborations with Mirko Febbrile, Chef De Cuisine at Braci, who will bring their take on contemporary Italian cuisine to Orchard Road. Guests at this Friends of Manhattan Series event will also be among the first to see flashes of Mirko’s highly anticipated upcoming spring menu for Braci.
Four snacks serve as a prelude to the main event – Gnocchi Cacio e Pepe, Hokkaido Scallops with Tropea Onions and Peperone Crusco, Foie Gras Semifreddo and Fig Vincotto, and an elevated bread course featuring Altamura bread, a traditional Apulian wood-fired product from the province of Bari that’s accompanied by Cima di Bitonto, a liquid gold extra virgin olive oil harvested from olive trees that grow abundantly in Mirko’s hometown.
For mains, expect sweet Mazara del Vallo Red Prawns with Smoked Dashi and Petit Pois; and Anchovy Tortellini with colatura, bright orange pops of ikura and Toritto almond milk foam. Then there’s Jospered Tochigi Wagyu ribeye, accompanied by yogurt cheese, whey and stuffed morels.
Dessert too is a taste of spring. There’s Fukuoka Strawberries paired with sake, as well as Sakura and Amalfi Lemon.
Braci’s stellar menu will be featured alongside various wines, as well as Italian-themed cocktails the Manhattan bar team has specially created for the occasion. You’re looking at Fiorello, bright, bubbly refresher of Haku Vodka, Cocchi Rosso, Tomato Sgroppino and Champagne that accompany the snack course before progressing to four more cocktails: a slightly savoury Verde Cello with Roku Gin, Matcha, Mancino Secco and Limoncello; a smoky Spezia with an impressive depth drawn from Maker’s Mark Manhattan Private Select, Amontillado Sherry, Spiced Port and Cherry Smoke; a deeply umami Funghetto with Chita Whisky, Mushroom-infused Cocchi Americano and Dill Olive Oil; and a rich, rounded Fragolina with Courvoisier VSOP and Strawberry Milk Punch to finish.
