The Macallan is partnering private dining chef Justin Foo for two exclusive dinner sessions that will feature one of its latest whiskies, A Night on Earth.
Leading single malt Scotch whisky brand The Macallan has tied up with private dining chef and content creator Chef Justin Foo for two whisky-pairing private dining sessions this February that will also showcase one of its latest releases, the Macallan A Night on Earth.
Chef Justin Foo has conceptualised and curated an exquisite spread of dishes for this whisky pairing menu with generous lashings of Chinese New Year flavours. Dishes include Salmon & Mandarins, a contemporary take on the salad tossing tradition of lo-hei, while Grandma’s Soup is a comforting seafood-based egg drop soup that’s even flambéed with whisky.
Justin’s star dish for the dinner is Bakwa, which is hanger steak that’s marinated and semi-cured before being smoked in oolong tea leaves and served with a black garlic puree. Rounding out the exquisite meal is Almond Lapis, featuring almond joconde sponge cake with pineapple jam and toasted coconut flakes.

The Macallan A Night On Earth is one of the latest expressions to be released in the Singapore market. This limited-edition release is a collaboration with illustrator Erica Dorn to celebrate the Scottish New Year festival of Hogmanay, with packaging and flavours reflecting the traditions of that special night.
The Macallan private dining experience in collaboration with Chef Justin Foo is priced at S$272+ per person, and will be held at Raffles Hotel Singapore on 21 and 28 Feburary 2022. Limited seats for both days. Reservations can be made here.
