In collaboration with boutique wine importer Raison Wines, Hilton’s Italian restaurant Il Cielo will be hosting a Domaine Camille Braun wine dinner on Friday 24 May 2019 at 7pm featuring the wines of the Alsace producer.
Alsatian wines are some of the most elegant wines in France, yet have been flying under the international radar for far too long. Home to classic, evocative grapes like Riesling, Gewürztraminer, Pinot Blanc and Pinot Noir, Alsace is known for making wines that come alive in your mouth with their abundant aromas, rich texture, lively acidity and keen minerality. Uniquely for French wines, Alsatian wines are generally made and labelled according to grape variety rather than geographic appellation, which makes these wines particularly expressive of specific grapes, and easier to approach and understand.
Domaine Camille Braun is located in Orschwihr, nestled between the foothills of the Vosges Mountains to its left and the Rhine river to its right. Tracing its roots in the area to 1583, the Domaine is proudly biodynamic, and particularly well known for its Grand Cru Rieslings.
Wines featured at the dinner are:
Camille Braun’s wines make the perfect partners to Chef Yohhei Sasaki’s sophisticated, Japanese influenced Italian cuisine. Chef Sasaki of Il Cielo – a Michelin Selection restaurant – has immense respect for the fresh, seasonal and pure Japanese and Italian produce he uses, and deftly combines these various influences into his own brand of exquisite, inspired cuisine. Chef Sasaki has especially created this menu to pair with Camille Braun’s wines. A truly elegant evening, not to be missed.
The full wine and food pairing menu is given below.
