15 Stamford by Alvin Leung at Capitol Kempinski Singapore will be hosting an exclusive, one-day only whisky dinner on Monday 27 February 2023 featuring the Scotch single malt whiskies of The Macallan.
This five-course whisky dinner will see dishes from 15 Stamford paired with three whiskies – The Macallan Double Cask 12 Years Old, a whisky with honey, citrus, wood spice and ginger notes; The Macallan Double Cask 15 Years Old, a harmonious blend of raisin, toffee, and vanilla; and The Macallan Double Cask 18 Years Old, an amber-hued whisky with rich dried fruit flavours and notes of wood spice and caramel.
The Macallan brand ambassador Mark Tay will be on hand to guide diners through the tasting of the whiskies during the dinner. Here you can explore the various whisky flavour profiles with innovative whisky-infused dishes such as a Botan Ebi “Ice Brick” with scampi roe, whisky, coconut & lemongrass foam, and the Norwegian King Scallop with toothfish brandade, sea urchin, and crustacean whisky foam. Then there’s a decadent Duo of Lamb with spiced carrot, apricot, black garlic crones, and Grand Marnier jus, as well as a Wagyu Beef Short Rib with hazelnut purée, radish, onion powder, and green Szechuan pepper sauce.
To end the meal? A refreshing yet indulgent Key Lime Curd topped with lemongrass ice cream (which should go swimmingly well with whisky!).
