Contemporary Japanese omakase restaurant Wagatomo will be hosting a sake pairing dinner on Saturday 1 April 2023 that will feature two sake experts and a preview of a new collaboration sake.
As part of this year’s Sake Matsuri Singapore, Japanese omakase restaurant Wagatomo will be presenting a sake dinner that will see a range of top-quality sakes paired with the innovative, season-driven nine-course menu by Wagatomo chef-owner Tomoyuki Kiga.
Joining Chef Tomoyuki in presenting this exclusive sake pairing dinner at Wagatomo is certified sake experts Sake Samurai Elliot Faber and Inter Rice Asia Director Adrian Goh, who will guide patrons through the sake pairings.
Among the inventive modern twists to traditional Japanese classics that diners will feast on include Hamachi Ceviche, the tart and citrusy dressing on the amberjack promising to combine beautifully with the apple and pear notes of the accompanying Sharaku Junmai Daiginjo Gokujo Niwari, or Tebasaki, the popular Nagoya fried chicken wings that comes served with truffle rice and dressed in teriyaki sauce. The latter is paired with the Hiroki Junmai Daiginjo, its clean and refreshingly fruity profile helping to balance the richness of the wings.
Wagatomo’s highlight of Iberico Pork Ribeye – seared to juicy perfection and glazed with ume miso – will be matched with the Miyoshi Green Junmai Daiginjo Namazume, the sake offering melon and muscat notes that will surely enhance the flavours of the top-grade pork.
Also unveiled at this sake dinner at Wagatomo is RASEN, an exclusive sake blended by Hyogo-based brewery Yaegaki in collaboration with Singaporean Chef Willin Low. Diners will get to taste this special sake ahead of its debut later in April.
This sake pairing dinner at Wagatomo on Saturday 1 April 2023 costs S$199 nett per person (minimum 2 persons to book) or S$699 for a table of four persons, and comes with nine courses with sake pairing.
