Tippling Sake: A Six-Course Sake Pairing Dinner

Award-winning restaurant bar Tippling Club will be partnering Mead Asia for a six-course sake pairing dinner on Thursday 1 August 2019 featuring its new Tippling Sake produced in collaboration with Hakugakusen sake.

Tippling Sake, produced by Takeshi Yasumoto of Fukui Prefecture’s Yasumoto Shuzo – the brewery behind the Hakugakusen (白岳仙) brand of sake – is brewed using traditional brewing methods married with modern data management to achieve its ideal flavour and fragrance. Yasumoto fundamentally reviewed traditional sake brewing techniques to create his own brand of Yasumoto sake brewing method, which involves the selection of raw ingredients, polishing, malted rice, yeast, and management of unrefined sake, maturation, bottling, storage, and delivery.

Tippling Sake

To celebrate the launch of this sake, Tippling Club is collaborating with sake distributor Mead Asia for a siz-course degustation menu paired with sake. Omelette Uni with Wasabi Sabayon; Pigeon with XO Cabbage and Shitake Dashi; and Medai Gunkan Maki. Each dish comes with a specially curated sake pairing. Head brewer and owner of Yasumoto will be present to guide diners through the sakes featured.
