Culina at COMO Dempsey is hosting a Westholme wagyu showcase with an exclusive menu over two nights this August.
Wagyu beef fans would no doubt have heard of Westholme Wagyu. Well respected in global culinary circles, the Northern Queensland-based Australian producer combines the finest Japanese pedigree cattle and Australian ranging techniques to produce some of the best wagyu beef around the world. Westholme beef is particularly known for consistent fine marbling, juicy tenderness, and a deep, rich flavour.
For the longest time too, highly-prized Westholme Wagyu cuts can only be found in the finest restaurants across Singapore. And limited on an allocation basis too, no less. Increasingly the prized beef has – thankfully for Singapore gastrophiles – become more available, and now can even be found over the counter at the meat section in premium grocer Culina.
If you’re looking to explore the wonders of Westholme Wagyu, the bistro at Culina at COMO Dempsey will be hosting a special Westholme Wagyu dinner showcase over two nights on 27 August and 3 September 2022. For ‘The Westholme Wagyu Experience’, Culina’s Executive Chef Timothy de Souza will be putting together a six-course dinner featuring the top grade wagyu cooked in different ways.`
The Westholme Wagyu Experience
When: 27 August 2022 and 3 September 2022; 6pm till closing
Where: Culina Bistro at COMO at Dempsey
What: Dinner starts off with raw options of Karubi Plate Carpet Bag Steak featuring poached oyster and pine nut cream, as well as a Tri Tip Tartare with shaved truffles and potato galette. Then there’s Sirloin, which comes as a sandwich, crumbed schnitzel, cabbage and BBQ sauce. Grilled Short Rib Salad follows with textures of endive and orange dressing to lead into Roasted Tenderloin Wellington with truffle potato puree and buttered carrots. Dessert is a Chocolate Marquise with smoked cherries and double cream.

Price: S$150+ per person with a minimum of two guests per reservation. Includes a complimentary glass of Torbreck The Struve 2019 per guest.

Culina is also hosting a two-hour cooking demonstration on 26 August 2022 from 3-5pm. Priced at S$120 nett per person, “The Culina Series: Wonders of Wagyu” will see Chef Timothy showcase three recipes – Beef Wellington, Beef Tartare, and Beef Cotoletta – during the demo. Attendees will take home a complimentary Beef Wellington and a recipe booklet from the class.
