Aside from its alluring Christmas Eve and New Year’s Eve menus, the two Michelin-starred Asian-accented modern French restaurant has unveiled for the month of December an elegant three- and four-course meal specially created by Chef-Owner Emmanuel Stroobant where each course is paired with a different champagne from the prestigious Maison Collery.
Established in 1893, Aÿ-based Champagne Collery may not be as well known as its peers in recent years. But its pedigree remains exemplary. Made with grapes sourced from Champagne’s top 17 Grand Cru villages, Collery’s range of champagnes stands a testament to exceptional winemaking and craftsmanship.
Consider, for example, Saint Pierre’s signature Oscietra Caviar of house-smoked Ora King salmon topped with La Maison Nordique Oscietra Imperial Caviar, which comes paired with the award-winning Collery Blanc de Blancs Grand Cru NV. Or delve into the Britanny Blue Lobster, its delicate sweetness and brininess is enhanced by the refined Collery Brut Grand Cru NV.
The culinary experience reaches new heights with the Collery Blanc de Noirs Grand Cru NV, its luscious and rounded profile holding up against its pairing of roasted AOC Bresse Chicken, that comes with a most delectable truffled and herbed chicken mousseline beneath the skin.
To round off this extraordinary festive Saint Pierre lunch with Collery champagne? A grand finale with the dessert of Korean Chestnut with the ethereal Collery Rosé Brut Grand Cru NV, the latter’s floral character a perfect match against seasonal Japanese Tochiotome strawberries and candied Korean chestnuts.
The Saint Pierre Maison Collery Champagne lunch menu is priced at S$378++ per person (four-course menu including four glasses of Maison Collery champagne) and S$308++ per person (three-course menu including three glasses of Maison Collery Champagne; not available on Saturdays) respectively and will be available from 1 to 30 December 2023, excluding 24 and 31 December. Guests may opt for an additional cheese supplement at $38++ per person.
