Osteria Mozza Singapore at Hilton Singapore Orchard takes Nancy Silverton’s Southern Californian-Italian eats to another level.

If you haven’t been following, Osteria Mozza is now at Hilton Singapore Orchard. First opened at Marina Bay Sands by New York celebrity chef Mario Batali, the original Singapore offshoot of the feted SoCal-Italian eatery shuttered back in 2018 when news of his scandal broke. But fans of its hearty fare rejoiced when, in 2022, Osteria Mozza returned to Singapore, reopening at the Orchard Road hotel under co-owner Nancy Silverton, another high-profile American celebrity chef.

Executive Chef Peter Birks, who worked closely with Chef Nancy Silverton at Osteria Mozza in Marina Bay Sands but joined Dave Pynt’s Meatsmith when that was shuttered, returned to head Osteria Mozza Singapore. Along with his team – many of whom were from the founding crew – Chef Birks continues to dole out the favourites that made the restaurant such a hit.

Among them are, of course, the classics that helped land the original Osteria Mozza in Los Angeles its Michelin stars since 2008. There’s their Mozzarella Bar, for example, burgeoning with all manner of burrata and mozzarella for the turophiles among us.

The Garganelli is pretty much a signature, the tubular pasta luxuriating in a rich Bolognese ragu. Likewise the Orecchiete, tossed with Italian sausage and Swiss chard.

But we like visiting Osteria Mozza Singapore during lunch, because that’s when they roll out the pizzas. The pizzas are sublime – a combination of flour types, long fermentation and quick firing in the restaurant’s custom-built oven using Californian almond wood results in a an airy cornicione that’s crisp and light.

For carnivores the Meat Lover, topped with bacon, salami, fennel sausage, and pancetta – is an absolute delight. Even more fun is the Cacio e Pepe, which takes the classic pasta treatment of aged Pecorino and black pepper and apply onto your pie.

Delicious.

And don’t forget to avail yourself of the largely Italian wine list, where most of the Italian wine regions – and indigenous varietals like Cortese, Garganega and Fiano – are well represented.
