Award-winning restaurant Tippling Club, which specializes in food-and-drink pairing, has partnered with Australian winemaker Penfolds to launch Bin 38, a three-part space encompassing chef-owner Ryan Clift’s state-of-the-art R&D test kitchen, R&D cocktail bar and lounge, and private dining facilities located one the second floor above the Tippling Club.

Named after Penfolds’ renown Bin Series – first created by legendary former Penfolds Chief Winemaker Max Schubert and christened after the numbered storage ‘bins’ within the Penfolds cellar- as well as the Tippling Club’s 38 Tanjong Pagar Road address, the 34-seater Bin 38 looks to take the restaurant’s food and wine pairing experience to yet another level. It will feature a special menu crafted by Chef Clift’s to complement a specially curated list of the best Penfolds wines, including aged and rare wines sourced directly from the Penfolds cellars. Dishes and paired wines will be updated every three months to feature seasonal ingredients, as well as newly-released vintages.

An exclusive Penfolds experience at Bin 38, designed for large group or shared dining experiences, can be had with eight courses for $675++ . There’s also the full-on Tippling Club experience, an insane food and cocktail pairing session available, for a trifling minimum spend of $5000++, that allows diners to sample new creations direct from Chef Clift’s R&D test kitchen (which are later transitioned to the main restaurant three months after debuting at Bin 38).

“The style of our food and drinks is continuously evolving in such a way and at such a pace that we require a dedicated R&D space to constantly create anew without distraction. When making Bin 38, I wanted a space that was every chef’s dream kitchen – a space where the design and equipment can’t help but breed creativity and inspiration on a daily basis,” explains Clift.
