Enjoy some of the tastiest ducks in the world with ‘Delectable Irish Ducks’ happening this March; Duckland, London Fat Duck and TungLok Peking Duck will feature dishes using birds from Ireland’s Silver Hill Duck.

Enjoy a good roast duck? Do we have news for you. Bord Bia (The Irish Food Board) is presenting a month-long promotion that spotlights ducks from Silver Hill Duck, one of the best premium duck producers in the world. For the month of March, Duckland, London Fat Duck and TungLok Peking Duck will be offering a range of duck-based dishes using those top-quality quackers.

If you’re not familiar with Monaghan-based Silver Hill Duck, their ducks have been the go-to for Chinese roast meat restaurants in Singapore in recent years. Their birds, a unique hybrid of Peking and Aylesbury breeds, are specially cultivated for roasting. These meatier birds come with a high fat-to-meat ratio and porous skin, so that they remain tender and flavourful during the roasting process. In fact, they are so succulent they’ve been called the “wagyu of ducks”. These ducks have been used in wildly different applications, ranging from Cure’s new Irish cuisine served three different ways, to being roasted classic Cantonese style in Chinese restaurants.

If you don’t believe us, head down to one of the three participating restaurants to find out. There is Duckland, which will be featuring their signature Roast Irish Duck, Duck Confit & Waffle, as well as Wagyu Duck Donburi, the latter a rice bowl burgeoning with roast Irish duck slices, and accompanied with seasonal and preserved vegetables, an onsen egg and topped with a housemade Japanese-style teriyaki sauce.

Hong Kong-style Chinese roast meat restaurant London Fat Duck will have on offer their Signature London Roast Duck, but also XO Duck Bak Kwa Fried Rice and Signature Black Pepper London Duck Bun. Finally there’s TungLok Peking Duck. The premium Chinese restaurant will be serving the famed Irish duck from Silver Hill Duck in traditional Peking style; the flayed TungLok Peking Irish Duck comes with the restaurant’s specially designed ‘Eight Treasures Box’ that comes with a variety of condiments.
