Meat & Livestock Australia has put together a series of four-hands dining experiences in top Singapore restaurants to promote quality Australian lamb.

Apparently, lamb ambassadors are a thing. Lambassadors, as they are called by Meat & Livestock Australia (MLA), are industry professionals – usually chefs – who are appointed to promote Australian lamb.

Well, if you’re a big fan of lamb, you’re in luck. The MLA has corralled a number of their local Lambassador chefs together to present a five-part four-hands dining experience in Singapore highlighting all-natural, sustainable and high-quality Australian lamb. This exclusive series will bring together restaurants, chefs and the local community with the aim of celebrating ‘the best of Singapore’s food culture while making Aussie lamb more accessible and approachable for everyone’.

This gastronomic adventure will take place across five evenings in April and May 2022 at some of Singapore’s most notable restaurants, headlined by MLA Lambassadors Executive Chef Eddie Goh from Meatsmith Telok Ayer, Executive Chef Felix Chong from Monti, and Chef Peter Smit from P&C. Each participating restaurant will feature innovative tasting menus featuring different cuts of Australian lamb prepared in their own signature styles.

For example, MONTI’s Chef Felix Chong and Edwin Tan from Meatsmith Little India will present two menus with a fresh focus on combining the rich cultural heritage of Mediterranean and modern Indian barbecue cuisines on 19 and 26 May using succulent Australian lamb. Dishes include hand-cut White Pyrenees Grain Fed Lamb Tartare, 14-hour Smoked lamb shoulder with garlic mashed potato and crispy lamb fat, and slow-cooked lamb neck served with pistachio & dill crust, heirloom carrot, mustard, and truffle & free-range yolk sauce.
