Summer Pavilion presents a harmonious blend of champagne and contemporary Chinese cuisine with a limited-time Telmont Champagne pairing dinner menu.

When two stars collide: one Michelin-starred Cantonese restaurant Summer Pavilion at Ritz-Carlton Millenia Singapore will be partnering Telmont Champagne – a wine producer in the Champagne region that’s a rising star for driving sustainability in winemaking – for an exclusive champagne pairing dinner menu that will be available in the coming weeks.

For those not familiar with Telmont Champagne, the winemaker not only possesses an unerring focus on terroir but also have been in recent years carving a path in its viticulture towards environmental sustainability. It even has its own set of green guiding principles it calls ‘In Nomine Terrae’, which includes objectives such as preserving terroir and biodiversity, eco-design, using renewable energy, greening its entire supply chain, and making its production more transparent.

The team at award-winning Chinese restaurant Summer Pavilion are big fans of Telmont’s sustainability ambitions. To celebrate Telmont’s sustainability approach, the restaurant has curated a special six-course menu to pair with the house’s champagnes.

Dinner kicks off with a duo of appetisers – Barbecued Duck, Goose Liver, Toast and Steamed Lobster Meat, Egg White, Black Caviar; these are paired with the classic Telmont Réserve Brut NV. Other dishes include the Pan-fried Hokkaido King Scallop, Spinach Sauce, Winter Melon, Prawn Paste that comes with the beautifully expressive Telmont Réserve Rosé, as well as the Pan-fried Japanese Wagyu Beef, Wild Mushroom matched with the exceptional Blanc de Blancs that is the Telmont Vinothèque 2005.

Other dishes on the menu include a braised Dong Xing grouper soup, steamed glutinous rice with Australian greenlip abalone, and a baked orange sago pudding for dessert.

To further elevate your dinner, you can even end your meal with a glass of LOUIS XIII Cognac as an optional add-on.
