Dusk Restaurant & Bar partners Danish winery Frederiksdal for a limited-time four-course wine pairing dinner featuring the latter’s cherry wines.

Dusk Restaurant & Bar, the Mount Faber restaurant with a picture-perfect panoramic view of Singapore’s southern coast, is currently offering a special wine dinner with a cherry on top.

Literally.

The restaurant has collaborated with Danish winery Frederiksdal to curate a four-course dinner available from 1 October to 2 December 2022 that sees its dishes paired with a selection of the winery’s cherry wines specially curated by Frederiksdal’s Master of Wine Jonas Tofterup.

Not familiar with cherry wine? We aren’t either. Cherry wine isn’t popular in our part of the world. It’s big in Michigan. But pretty much nowhere else.

That is set to change if Frederiksdal has its way. The Danish winery recently showcased its range of critically-acclaimed cherry wines – made with Nordic Stevnsbær cherries – at ProWine Singapore to great success, where they even announced a new version of the Singapore Sling made with their wine created exclusively for Mount Faber Leisure Group.

You can try that Singapore Sling 2.0 at the Dusk x Frederiksdal wine dinner.

In fact the menu kicks off with the Mount Faber Singapore Sling, which eschews the usual Cherry Heering for the Frederiksdal Likør.

Dinner then commences with Cappuccino of Morel & Italian Summer Truffle, paired with the Frederiksdal Rancio. This is followed by Laksa Tiger Prawn Capellini – featuring a succulent giant tiger prawn and sautéed angel hair pasta tossed in aromatic laksa-infused oil – accompanied by the Frederiksdal Sur Lie, a richer and deeper tasting wine aged in French oak barrels that enhances the spicy kick of the laksa flavour.

Diners get to pick from two options for their mains. There’s Pan-Seared Red Snapper served with tangy mango salsa and a side of crushed potatoes and garden vegetables, or the French-Cut Rack of Lamb accompanied by sarladaise potatoes and seasonal vegetables, soaked in a red wine reduction. Your choice will come with the Frederiksdal Reserve, an exquisite expression that is blended from several vintages matured in small French oak barrels for up to 30 months.

To round off the meal there’s the Guinness Chocolate Cake with Irish Cream, which comes served with air-flown Danish cherry compote. This is paired with the Frederiksdal RØD, a sparkling cherry wine.

As for the new Mount Faber Singapore Sling? It’s going a permanent addition to Dusk Restaurant & Bar and Arbora Hilltop Garden & Bistro at Mount Faber Peak.
