Located at Hong Kong International Airport’s stunning new Sky Bridge – the world’s longest airside bridge, and one that connects two different wings of the airport – this cocktail bar conceived by airport lounge operator Plaza Premium Group offers an incredible view of the workings of the airport while you sip on artfully-created cocktails and dine on dainty tapas.

Designed by Australian architect Mitchel Squires, Intervals has thoughtfully-designed spaces where tired travellers can rest and relax while taking in sweeping views of Hong Kong International Airport from the airfields, runway, and aerodromes to the mountains beyond.

Intervals - Ripen

The cocktail menu is themed along the idea of time. Particularly, the little snatches of time you catch in between periods of frantic busy-ness. The cocktail experience here is cleverly tailored around flights, each of which offers a curated set of sample-sized cocktails the number of which depends on – you guessed it – how much time you have or intend to spend there. 15 Minutes, for example. It comprises of cocktails Reverie and Rise, the former a take on the Martini while the latter is a cognac-based Espresso Martini and Irish Coffee hybrid.

Or 30 Minutes, with four cocktails namely Green, Growth, Ripen and Fallen. These cocktails bring you through flavours of different seasons; Ripen is a Pisco Sour with notes of apricots to highlight fall, while overripe banana and treacle notes of the Old Fashioned that is Fallen tastes of winter.

And if you really like what you’re tasting, each cocktail can be ordered individually as a full-sized portion. Non-alcoholic versions are available as well.

Pinchos at Intervals

Food at Intervals comes as very cosmopolitan small bites styled around Spanish-style pinchos. Options run from The HK Prawn Toast as inspired by a local dim sum favourite, to the very Levantine The Pita that comes with falafel, tzatziki and tahini. How about The Smash, a canape-sized version of the very Aussie avo smash toast, or The Nordic with its gravlax, soured cream and lemon?

For those with more time, Intervals does offer full breakfast or main courses if you need a heftier meal.
