Signature dishes include the surprising hot and cold onion soup, the moreish Alaskan king crab and crustacean jelly, an indulgent Australian wagyu beef tartare and oyster topped with caviar, as well as delectably juicy lamb from L’Aubrac done two ways (roasted filet and braised rib). Chef Guillaume leans on classic French techniques, particularly in layering flavours and textures, as well as saucing, to tie what seems to be disparate elements on the plate, into a beautiful and tasty whole.
