La Dame de Pic at Raffles Singapore unveils an enchanting winter-inspired menu that combines comfortable seasonal flavours of winter with impeccable French technique.

Winter flavours abound in the latest seasonal menu at La Dame de Pic. Created by Chef Anne-Sophie Pic and perfectly executed by Chef de Cuisine Alexandre Alves Pereira, the latest tasting menus offered at the whimsical contemporary French restaurant at Raffles Singapore takes classic winter ingredients and give them the refined Anne-Sophie Pic spin.

And like the affectionate and motherly embrace from your favourite eccentric aunt, the new slew of winter creations warm the soul as much as they delight the palate. From the playful amuse-bouche and starters to the elegant mains, Anne-Sophie Pic’s signature delicate flourish is clearly evident.

The textures of soy in the Beeswax and Caviar, for example, sees its creaminess cleverly countered by the briny indulgence of caviar, while the impeccable Kinmedai is a masterclass in curing, itself marinated in marigold and Japanese kabosu citrus for floral tanginess, but also the ribbons of pickled beetroot that comes alongside.

Piping hot pies are always welcome during winter, and here La Dame de Pic gives Asian accents to the classic French pithivier in Matsutake Pie with minced matsutake. For the perfect mouthful, make sure you smear on some of the accompanying vin jaune and curry sabayon.

And there’s Ann-Sophie’s trademark Les Berlingots. This season sees her delicate parcels filled with a puree of winter squash, swimming in a tangy broth rendered from squash jus and turmeric.

For mains, diners can opt between Wagyu Beef A4 or Wild Sea Bass. The perfectly executed well-marbled beef comes marinated in fresh peppercorn cardamom leaves and served alongside a moreish béarnaise sauce, while the delicate fish comes adorned in a herbaceous symphony of laksa and genmaicha sauce.

For dessert? There’s La Dame de Pic’s signature Mille Feuille, but the seasonal winter exclusive of Pear and Gedeo Coffee – featuring pear roasted with chestnut honey that’s scented with green cardamom and yuzu – makes for a great alternative to end your meal.

The latest winter menu at La Dame de Pic at Raffles Singapore is presented as either a five-course ‘Experience’ (S$248++) and a seven-course ‘Elegance’ menu ($348++).
