Modern European restaurant Pollen is collaborating with Hendrick’s Gin for a three month-long tea-time pop-up that offers a botanical-inspired high tea menu.

Few places are as picture-perfect as the picturesque Flower Dome at Gardens by the Bay, but one way to elevate the experience is to end a walk amongst the flora is with high tea at the open terrace at Pollen, which overlooks indoor garden. Now it’s gotten even better – from 14 September to 30 November, Pollen will be hosting a special Hendrick’s Gin pop during its afternoon tea sessions.

The collaboration sees Pollen’s executive chef Steve Allen create a range of sweet and savoury treats that are inspired by the 11 different botanicals used to make Hendrick’s Gin, such as lemon, coriander seeds, angelica root, elderflower, orange peel, chamomile, Bulgarian rose and cucumber. There’s the like of Braised Beef Cheek wrapped with carrot that’s been pickled in lemon, an Elderflower and Strawberry Jelly, a most delectable Chicken, Coriander and Orange Open Sandwich, and even a Tomato Gazpacho with Cucumber and Grape Sorbet.

And while you can pair that with tea – it’s high tea, after all – we’d rather stump up a little more for the Hendrick’s Gin cocktail libations specially concocted by brand ambassador Tasha Lu. Pick either the floral Miles & Miles, made with Hendrick’s Gin, chamomile tea, lemon juice, and elderflower liqueur, or the more herbal Matcha Mint Mello, put together with matcha green tea, mint leaves and lime juice.

The Hendrick’s Afternoon Tea (with cocktails) at Pollen is available at $50++ per person, and runs from 14 September to 30 November 2017.
