To celebrate the season, La Dame de Pic at Raffles Singapore has launched a spring menu that comes paired with Billecart-Salmon champagne, including the newly-released Billecart-Salmon Elisabeth Salmon Rosé 2008.

We don’t need more reasons to visit La Dame de Pic in Raffles Singapore, the Singapore outpost of the eponymous fine-dining concept by Chef Ann-Sophie Pic of three Michelin-starred Maison Pic fame. But here’s two. One is an exquisite tasting menu the elegant modern French restaurant has just unveiled for spring that features a bounty of fresh seasonal ingredients. The second? It’s tied up with iconic Champagne house Billecart-Salmon for a range of champagnes to pair with the spring menu, including the much-anticipated Billecart-Salmon Elisabeth Salmon Rosé 2008 that’s just been released.

From 23 April to 20 June 2021, La Dame de Pic will be offering a five-course Billecart-Salmon “Experience” and six-course Billecart-Salmon “Elegance” menu that sees its beautifully-crafted Japanese-inflected modern French spring creations that come paired with a carefully-curated Billecart-Salmon expression.

There’s the likes of Brown Crab sourced from Britanny topped with a basil and sorrel ice cream and served alongside a crustacean brioche, for example, or Green Asparagus from Loire Valley that explores its textures and flavours through different cooking methods. These are served with the Billecart-Salmon Brut Reserve NV and Billecart-Salmon Brut Blanc de Blancs NV respectively.

The Brown Crab from La Dame de Pic’s Spring 2021 menu sees shredded Brittany brown crab meat topped with an “ice cream” of basil, sorrel, and coffee.

As can be expected of any visit to La Dame de Pic, you can look forward to a seasonal twist of Chef Ann-Sophie’s signature Berlingots; this spring sees her little classic pasta parcels bursting with lightly smoked goat’s cheese doused in a ginger- and geranium-infused mushroom broth. Here the tang of the goat’s cheese and earthiness of mushroom worked very well with the oaky notes of its Billecart-Salmon Brut Sous Bois NV pairing.

The star champagne of the collaborative spring menu, the Billecart-Salmon Elisabeth Salmon Rosé 2008 is served alongside La Dame de Pic’s grilled Veal Rack that’s marinated in coffee grounds and lovage. The fruit concentration of Pinot Noir in this expression helps the champagne hold its own against the meatiness of lamb, which in return brought out some lovely floral notes from the cuvée for a lovely taste of spring.

The newly-launched Billecart-Salmon Elisabeth Salmon Rosé 2008 exudes elegance, freshness, and complexity in equal measure.

The meal is rounded by yet another Chef Ann-Sophie signature, the White Mille-fueille. This season sees the confection encasing Bhutan orange confit jelly and cinnamon leaf emulsion, its citrusy yet spicy tones interplaying well with the freshness of the accompanying Billecart-Salmon Brut Rosé NV.

The five-course Billecart-Salmon “Experience” and six-course Billecart-Salmon “Elegance” menu at La Dame de Pic costs S$248++ and S$348++ per guest respectively, with the Billecart Salmon champagne pairing coming in at S$188++ and S$238++ respectively. The La Dame de Pic and Billecart-Salmon collaboration menus are available from 23 April to 20 June 2021 Reservations are compulsory.
