Raffles Courtyard x Ownself Make Chef sees Raffles Courtyard partner Chef Shen Tan for “Make Mee Great Again”, a culinary popup from 19 August to 15 September 2021 to present her unique noodle spin on local fare.
Following the resounding success of the previous editions of its Private Chef Series of culinary pop-up collaborations, Raffles Courtyard at Raffles Singapore has turned to Chef Shen Tan of Ownself Make Chef for the third edition in the series. Chef Shen is best known as the lady doyen of nasi lemak; the mod-Sin private dining chef most recently returned to her hawker roots by starting hip nasi lemak stall OG Lemak at Newton hawker centre.
Previous editions featured popular private dining chef duo Tinoq Russell Goh and Dylan Chan, followed by Annette Tan of Fatfuku fame. For the latest collaboration, Chef Shen will present three exclusive noodle-based dishes. There’s SG Lard (Lao) Ban Mee Sambal Noodle, which is a hearty bowl of spicy wheat noodles tossed in lard sambal and topped with condiments such as ikan bilis, lardons, fried garlic, spring onions and coriander, as well as pieces of five-spice pork and a fried egg.
For those who prefer things less spicy, the Bee Tai Mak-velous Ulam Pesto is a bee tai mak rice noodle take on traditional nasi ulam. Here the mixed herb pesto perfumes the rice noodles and give it amazingly fresh flavours, while crunchy ikan bilis and salted egg-cured barramundi and prawns help break any monotony. Like your heat? Add some sambal belachan to make this a fiery experience as well.
Those with a sweet tooth will love the Orh-Nee You. This is traditional Teochew yam paste meets Cantonese deep-fried yam puff, infused with shallot oil and lard for savoury complexity. Served alongside coconut ice cream, this dessert will leave you craving for more.
These Raffles Courtyard x Ownself Make Chef dishes are available separately, but are also served as a bundle for just S$50++.
Raffles Courtyard x Ownself Make Chef will run from daily from 19 August to 15 September 2021, 3:00pm to 9.00pm. If you drop in from 6-9pm on Tuesdays, you can catch Chef Shen Tan there as well.
The next Private Chef Series edition at Raffles Courtyard will see Chef Sandra Sim of Lady Boss Dining Club, who is also the homegrown restauranteur behind former Cantonese tapas bar Sum Yi Tai and glitzy cocktail backroom Mona Lounge, take the culinary stage.
