Popular private dining chefs Tinoq Russell Goh and Dylan Chan will be collaborating with Raffles Hotel Singapore for PasirPanjangBoy x Raffles Courtyard from 12 March to 11 April 2021.

Having made a name for themselves in the local private dining scene, local chef duo Tinoq Russell Goh and Dylan Chan – better known as PasirPanjangBoy (PPB) – will be collaborating with Raffles Courtyard at Raffles Hotel Singapore to offer three of their signature dishes to the public for a limited time only.

From 12 March to 11 April 2021, Raffles Courtyard will be showcasing PPB favourites Ngoh Hiang, Beef Rendang, and Prawn Noodle Soup at its relaxing outdoor space with Raffles Hotel Singapore.

PPB’s Ngoh Hiang is chock full of quality ingredients and serves up a toothsome bite, thanks to the chunky water chestnuts that were painstakingly peeled and prepared from scratch. The accompanying tangy chili and sweets sauces are also PPB’s original recipes.

The idea of a Beef Rendang paired with fried mantou seems strange until you try it. PPB’s version takes beef shin and braises it down until it melts into a meaty sauce, full of fatty juices ready to be mopped up with crispy buns.

If you’re craving for something really comforting, PPB’s Prawn Noodle Soup will hit the spot. The rich stock made from pounded prawn shells and boiled pig skin is balanced with not just a run-of-the-mill chili powder, but their own concoction – belachan chili powder – providing a spicy kick to the dish. Do note that this dish is only available on Wednesdays though.

Indeed we recommend that you visit the PasirPanjangBoy x Raffles Courtyard pop-up on Wednesdays, as you can get all three signatures in a bundle for S$38++. Make sure to also take advantage of the happy hour deals at S$10++ for selected wines and cocktails for a complete dining experience. Otherwise there’s a range of cocktails on offer as well.

Raffles Courtyard will continue to serve their regular menu, which include bites like Gado Gado, Har Cheong Boneless Chicken Thigh and Salted Egg Squid, during the collaboration period.

What started out as a private dining business for PasirPanjangBoy has grown into one of the most sought-after and booked-out gourmet experiences in Singapore; this collaboration at Raffles Courtyard makes their vaunted heritage Peranakan eats just that little bit more accessible to the public, so gourmands – seasoned or aspiring – would be most wise to check this pop-up out.
