La Dame de Pic at Raffles Singapore celebrates the bounty of spring with new offerings blossoming with the fresh flavours of the season.
The advent of spring is always a boon for chefs, who look forward to the season’s bounty for their new tasting menus. Over at Chef Ann-Sophie Pic’s eponymous fine-dining modern French restaurant La Dame de Pic, Chef de Cuisine Francesco Di Marzio has transformed the finest produce into an array of dishes that are bound to impress on us the fresh flavours of spring.
Such as lovely spring vegetables! In fact it is currently peak season for quintessential spring vegetables such as green and white asparagus (particularly for the prized white variety). Or freshly-picked petit pois, those young green peas at their peak sweetness these two months. Chef Francesco and his team has drawn on produce such as this to compose three different seasonal tasting menus available now till early June when summer comes around.
Available during lunch on Fridays and Saturdays is the four-course ‘Exploration’ menu, which puts green asparagus and peas up front and centre. Among the featured dishes? You’re looking at asparagus done different ways, their buttery sweet yet earthy flavours accentuated by La Dame de Pic’s classic French-Japanese treatment with ginger, wasabi, and matcha. Then there’s the restaurant’s signature berlingots. This time the pasta parcels are stuffed with puréed peas, their sweetness heightened and offset by a buerre blanc sauce infused with sake and pepper leaves. For mains, pick from madai (sea bream) scented with dill and saffron, or an organic Welsh lamb flavoured with anchovies and sakura.
For dinner, diners choose between the six-course ‘Experience’ or seven-course ‘Elegance’ menus. The ‘Experience’ menu is similar to ‘Exploration’ for lunch, except that the madai comes as its own course, while you choose from the Welsh lamb or a roast Bresse chicken for your main.
The extravagant ‘Elegance’ menu, though, is the ultimate La Dame de Pic spring experience this season. Instead of green asparagus like other menus, this features white asparagus served alongside mussels in a roasted kombu and black garlic sauce. Other prized ingredients featured in this menu include Amela tomato, langoustine, and Kurama tiger prawn, among others. For your main course, you’ll be hard pressed to decide between the Bresse chicken or an A4 wagyu tenderloin, the latter skilfully seared into perfection.

The spring tasting menus at La Dame de Pic this season – available now till early June – are priced at S$188++, S$248++, and S$348++ per person for the four-course ‘Exploration’, six-course ‘Experience’ and seven-course ‘Elegance’ menus respectively.
