Osteria BBR by Alain Ducasse in Raffles Hotel Singapore showcases the flavours of springtime in the Italy Riviera with its new Spring 2023 menu.

To celebrate the new spring season, Osteria BBR by Alain Ducasse has pulled out all the stops with its all new limited-time specialities exploding with the vibrant flavours you’d expect during this time.

We know contemporary Italian bistro Osteria BBR by Alain Ducasse best for offering a taste of the Italian Riviera. This spring Chef de Cuisine Natalino Ambra draws on his heritage and culinary experience to feature the finest spring produce – such as the freshest in-season ingredients such as asparagus, green beans and green peas – using traditional Italian cooking techniques with modern twists but applied to the cuisines around the Ligurian coast and beyond.

The result? Seasonal creations executed to perfection that will please even the most demanding of Italian nonnas.

There’s Burrata Pugliese, a spring take on the classic burrata dish that comes paired with nutty broad beans and crunchy green asparagus instead of the usual tomatoes, for example, or Capesante Scottate, which pairs the briny sweetness of beautifully-seared scallops with fresh green peas and almond. You’ll also luxuriate in Lattuga Marinata, which presents a chunk of succulent fresh-poached lobster alongside an absolutely delicious twist on Caesar salad of marinated romaine lettuce and zesty orange that’s dressed in a house-made tartar sauce crafted from anchovies and capers imported from Italy.

If you’re into pasta, the Mafalde Di Gragnano sees the long scalloped strands of mafaldine caressed in a delectable lamb ragout, while risotto lovers will revel in Risotto Acquerello, which comes in creamy pesto lashed with preserved lemon and topped with poached langoustine.

Don’t forget to order the Carre Di Agnello Alla Griglia of juicy charcoal-grilled premium lamb rack, which is one of the best renditions of lamb we’ve had in a long while. Otherwise there’s Filetto Di Ricciola, which sees a hunk of seared amberjack fillet and grilled artichoke served on bagna cauda sauce.

You’ll want to leave some space for dessert. The Limone Di Amalfi takes prized Amalfi lemons – right now at the peak of its season – and turns it into a zesty and creamy lemon sorbet sandwiched between a biscuit crust and sugar tuile for the perfect sweet end to your meal.
