Austrian Gourmet Week returns to Andaz Singapore for its 2023 edition, starring Michelin-starred Chef Max Stiegl of Burgenland’s Gut Purbach.
Following a successful inaugural edition last year, the Austrian Gourmet Week makes a return to Singapore this year and will run from 13 to 17 October 2023.
Organised by the Austrian National Tourist Office and the Austrian Embassy of Singapore in partnership with Andaz Singapore, Austrian Gourmet Week 2023 will see guest chef Max Stiegl of Gut Purbach take over the hotel’s flagship steakhouse restaurant 665°F to offer an exclusive Austrian menu during the five-day period.
Chef Steigl is best known at his restaurant for a culinary approach that combines farm-to-table dining and sustainable cooking practices with a dedication to reviving traditional Austrian cooking. Aside from a commitment for using local and seasonal ingredients, he’s a huge advocate of using offal in his cooking. In fact, during winter Chef Stiegl orchestrates the Sautanz, an extraordinary food festival known as a ‘feast for the senses’ that the keenest epicureans – including the late Anthony Bourdain – make a gastronomic pilgrimage for.
For Austrian Gourmet Week, Chef Stiegl has put together ‘An Ode to Austria’, a five-course gastronomic journey that will be sure to delight gastrophiles. Aside from his signature dish “Chicken In The Bubble” – chicken cooked in a pig’s bladder, stuffed with decadent ingredients like duck liver and truffles under the skin (pictured above) – from Gut Pubach, there are also twists to Austrian classics such as Ratatouille, an artful medley of Viennese vegetables; Oafish, a typical Austrian dish with cauliflower and poached egg; and Ritschert, a comforting and hearty stew served with smoked eel. For dessert, there’s Viennese Bread Soufflé, served with orange liqueur and corn ice cream.
