Mandala Club’s next Mandala Masters edition will see award-winning Bangkok restaurant Le Du take up culinary residence in Singapore this November.

Asia’s best restaurant is coming to town.

Bangkok’s refined Thai restaurant Le Du, which emerged at the top of the Asia’s 50 Best Restaurants list this year, is the latest award-winning restaurant to pop up in town. For the upcoming edition of the Mandala Club’s Mandala Masters gastronomic series, Chef ThiTid ‘Ton’ Tassanakajohn of Le Du will be dropping into the newly-renovated Mandarin Oriental Singapore for a Mandala Masters residency running 1 to 12 November 2023.

First opened in 2013, Le Du is best known for its elaborate and elegant cuisine that seamlessly fuses contemporary European techniques and sensibilities with the traditional region-focused flavours of Thailand. For his two-week residency, Chef Ton – whose restaurant empire also includes private fine-dining Nusara and modern Thai eatery Baan among others – will be putting together a menu that will bring diners on a gastronomic journey across Thailand, with creative interpretations on classic regional Thai cuisines with Northern Issan to Central, Southern, and – of course – Royal Thai inspirations.

It will be the full Le Du experience too, with Chef Ton flying in with his 26-chef team for the residency, offering an entire tasting menu complete with non-alcohol, cocktail and wine pairing options available for a perfect gastronomic journey.

Highlights include his signatures Prawn, Beetroot and Chili; Lobster with Shrimp Paste and Jor-Rang Curry. There are three brand-new dishes as well that Chef Ton has created as a sneak preview to Le Du’s upcoming new menu in Bangkok, such as Squid with Scallion and Salted Duck Egg; Amadai, Cauliflower and Issan Herbs; and Japanese wagyu and Spicy Northeastern style sauce. And to round off the epic meal, a dessert of Coconut and Palm Sugar. Ingredients used for this menu is largely sourced from Thailand in support of local farmers and sustainability initiatives.

“With six successful World’s 50 Best residencies under Mandala Masters portfolio, we are consistently committed to bringing the very best of the best culinary experience to Singapore, and our collaboration with No.1 Asia’s 50 Best restaurant by Chef Ton and Mandarin Oriental Singapore is no exception,” said Managing Director Mandala Masters, Zaran Vachha.

The upcoming Mandala Masters edition with Le Du follows successful residencies by globally acclaimed and World’s 50 Best restaurants such as Delhi’s Indian Accent, Tokyo’s Narisawa, Mirazur by Chef Mauro Colagreco, Gaggan Anand, as well as Peru’s MASL by Virgilio Martínez and Pía León.
