What happens when you cross Michelin-starred level culinary precision with a casual tapas-style concept? For modern French-Japanese restaurant Whitegrass at CHIJMES, it’s Dew by Whitegrass.
The new offshoot by Whitegrass is a quaint laidback cafe-bistro, located right next to its formal fine-dining sibling. Bright and cheery in the day, Dew is a minimalist space that positively oozes classy Japanese idiosyncrasy. It will not look out of place in, say, more fashionable districts in Tokyo such as hip Shimo-Kitazawa, upscale Daikanyama, or eccentric Harakuju.
Much like its food. Dew by Whitegrass offers up contemporary European dishes with Japanese accents as refined small plates. You can totally imagine a gaggle of Japanese expat housewives having their regular meet-ups here, snacking daintily on a spread of these tapas-style portions good for more petite appetites.
Think snacks like fluffy gougères that is Cheese Choux Puff, or Potato Bombs, which are tiny little pomme noisettes which come in curried or anchovy flavours. For a fresher start go for Pink Ocean, which serves up a house-smoked salmon and amberjack done carpaccio-style.
There are bigger mains. The slurp-worthy Yuzu Kosho Seaweed Pasta is a delicious umami bomb, while the IGA Wagyu Don takes prized Iga beef from Mie Prefecture and turns it into a delectable rice bowl.
Dew by Whitegrass also has a fun exploratory drinks programme centred around less commonly found Japanese sake and shochu.
If you’re the sort who enjoys a chill cafe-type environment that happens to have eats of standards much higher than those of plain vanilla cafes or bistros, Dew by Whitegrass will hit the spot. Just don’t come too hungry.
