There’s cake and there’s whisky. And then there’s the new seasonal Lady M Whisky Dark Chocolate Mousse cake that comes infused with The Macallan Double Cask 12 Years Old, which debuts in Singapore today.
If you love cake as much as you enjoy a good whisky, well you’re in luck. Luxury patisserie Lady M has brought to Singapore its latest seasonal creation, and this time it’s a spirit-infused one. That’s right, the Lady M Whisky Dark Chocolate Mousse is a special collaboration with leading Scotch whisky brand The Macallan in a first-of-its-kind partnership.
New York City-based Lady M, of course, is best known for its signature – and crazily popular – mille crêpe. But for the new seasonal offering it turned to mousse cake instead. For the Lady M Whisky Dark Chocolate Mousse, you’re talking about two layers of dark chocolate and milk chocolate whisky mousse sandwiching orange zest studded whisky jelly, set atop a chocolate sponge base and dark chocolate feuilletine that’s all enveloped in a dark chocolate glaze and garnished with dehydrated orange slices.
And if those flavour characteristics of ginger, chocolate, and citrus sound familiar to fans of The Macallan, that’s because it is. The whisky used in Lady M Whisky Dark Chocolate Mousse is specifically The Macallan Double Cask 12 Years Old – part of The Macallan’s core Double Cask range – which offers that exact profile. Its big notes of heather honey, sweet citrus, and spicy ginger comes from the use of American oak casks as well as sherry-seasoned European oak casks. Which, of course, explains Lady M’s treatment for the mousse cake.
Whisky. Cake. Whisky. Whisky. Hmmm.
While it’s not Lady M’s first confection to feature alcohol — that honour goes to the Champagne Mille Crêpe for the 2019 holiday season — this is the first time it’s fully collaborated with an alcohol brand.
“We chose The Macallan because their dedication to the mastery of wood and spirit results in a distinctive and quality whisky. This parallels Lady M in that we focus on the highest quality ingredients and fine-tuned techniques to create our luxurious, handmade cakes,” affirms Ken Romaniszyn, founder and CEO of Lady M.
The Lady M Whisky Dark Chocolate Mousse cake featuring The Macallan Double Cask 12 Years Old is available for dine-in and retail across all five Lady M boutiques in Singapore, as well as pre-ordered online with island-wide delivery, from 7 January to 28 February 2021. The cake will retail in-outlet at S$18 by the slice and S$180 as a 9-inch whole cake, and online at an online-only rate of S$170 nett for a 9-inch whole cake. Retail prices are subject to prevailing government taxes unless otherwise stated.
