The special Roku Gin set menu at The Nest in One Farrer is a beautifully-composed gourmet showcase of the botanicals used in the making of the Japanese gin.

Located on the top floor of One Farrer Hotel, The Nest is an exclusive space the hotel specially repurposed for private dining. One of the newest gourmet experiences offered by The Nest is specially-curated set menu that features pairing with cocktails made with Roku Gin.

Diners looking specifically for privacy in a cosy, intimate space can avail themselves to this five-course Roku Gin pairing set menu. Created by the award-winning culinary team at The Nest, each dish featured in the set was inspired by the six botanicals used in the making of Roku Gin.

If you’re not familiar with Roku Gin, this is an award-winning Japanese gin from the House of Suntory. It uses botanicals unique to Japan – Sencha tea, Gyokuro tea, Sanshō pepper, yuzu peel, as well as the flowers and leaves of the iconic sakura, which is why spring season is important to Roku Gin.

Dishes include an elegant Snow Crab Timbale filled with fresh crab meat that’s tossed through with a citrus aioli, then topped with a salted cream foam along with sakura and lychee jelly, as well as the Chicken Consommé, its broth delicately infused with Sencha while the chicken gyoza bursts with flavours of truffle and charred spring onion.

Continuing the gin-inspired epicurean journey is Crumble Black Cod (pictured above). This is beautifully pan-seared cod with a butter caper sauce lends silky creaminess and a salty tang to lift the flavours of the fish.

After you cleanse your palate with a sorbet made with Roku Gin, cold compressed watermelon and Gyokuro tea, you’ll move on to the Black Angus Beef Short Ribs. Splendidly fork-tender, the beef rib comes smothered in an unctuous bone marrow jus along with sunchoke puree and topped with a piece of foie gras, broccolini, and garnished with a tempura sakura leaf.

End the meal with the Cronut, an elevated version of the croissant-donut hybrid that is filled with red bean and matcha, and served alongside yuzu ice cream.

And don’t forget the cocktails! The meal comes along with six tipples that form a riot of colours and flavours. Cocktail creations include Kanpai, comprising of sour mix, soda water, and Roku Gin, and Okawari, which combines the gin with cranberry juice and lemon juice. You’ll have plenty of fun trying to pair each cocktail with the different dishes on offer.
