For those not familiar with this prestige pink bubbly, the Cuvée Elisabeth Salmon was first created in 1988 as a tribute to Elisabeth Salmon, one-half of the maison’s original founders. Salmon married had Nicolas François Billecart in 1818, and founded Maison Billcart-Salmon shortly after their union in Mareuil-sur-Aÿ, the family’s home town. Her namesake cuvée was created to embody her traits – feminine, elegant, sophisticated, and with a touch of verve.
