Celebrate Peruvian pisco this November at nine venues across town as Pisco Nights returns in 2022.

If you’re a big fan of pisco, November is your month. Pisco Nights – a celebration of all things pisco presented by PROMPERÚ, the export and tourism agency for Peru – comes back for its third-ever edition this November after two successful years.

As with previous Pisco Nights, expect to see participating drinks and dining venues across town offer up exclusive, limited-time cocktails made with pisco.

Not familiar with pisco? Well it’s the perfect time to get acquainted with this distilled grape spirit (brandy) from Peru. Pisco can be made from eight different grape varieties: Quebranta, Negra Criolla, Uvina, Mollar, Moscatel, Torontel, Italia and Albilla. How does it differ from cognac, you ask? Unlike cognac (or armagnac) which is aged in oak casks, real pisco cannot be aged in wood. Instead it is matured in non-reactive traditional clay pitchers known as botijas, or more recently, stainless or glass.

The result is a grape brandy that’s totally different to other grape-based brandies. But one that is getting popular with bartenders for mixing into cocktails. As you would find out this November at Pisco Nights.

Pisco Nights 2022

From 1 to 30 November 2022, cocktail enthusiasts can enjoy exclusive, limited-time cocktail creations at these participating venues:

Bar Stories

Head down to Bar Stories for Ivory Tower, where Champagne Makgeolli is paired with the earthy flavours of Pisco Quebranta, and balanced with the floral perfume of an artisanal Japanese lychee liqueur.

CANCHITA Peruvian Cuisine

Drop in for the Pink Pisco Kiss, inspired by the classic Peruvian Chilcano cocktail. This  refreshing tipple uses delicate chamomile tea in place of the typical ginger ale to balance Pisco Quebranta’s unique flavours. Lime and tonic water add citrus and fizz, while butterfly pea flower is used to garnish the drink and give it a distinct pink hue.

Gibson

Come here for Fountain Of Life – a concoction of Mosto Verde Pisco, coconut water, pineapple lime cordial, and fino sherry – which is both a refreshing drink as well as a hangover cure.

Hopscotch

Here you’ll find Uvas Del Dios, a powerful dessert-like tipple inspired by the challenges faced by Peru’s Ica Valley vineyards. This is Pisco Torentel with ruby port, cherry brandy, vanilla syrup, dark chocolate liqueur and black grapes. Some lime and firewater tincture add complexity.

Jekyll & Hyde

A bold and aggressive creation that sees Quebranta Pisco is infused with cinnamon and grapefruit combined with cacao-infused Mezcal, black walnut bitters, Hellfire Habanero Shrub and spiced Tepache, the Warrior’s Call is inspired by the chilling war cries of the warriors of Peru’s ancient Aztec empire.

Ju Hua Tai

The First Maiden takes Thai and Singaporean flavours to pisco, pairing Quebranta Pisco, housemade lemongrass pandan tea, Ginger of the Indies liqueur, honey and grapefruit juice for a floral and fruity number.

Live Twice

Beautiful Hometown 里佳 pays tribute to the source of pisco – grapes – by combining pisco, cinnamon and clove tea, amontillado sherry, raspberry jam, lime, and milk for a pisco twist on the milk punch.

The Bar at 15 Stamford

The Cortador De Niebra is a take on a classic tiki cocktail using Pisco Quebranta and overproof rum. Housemade coconut sangria, lemon, orange and rose flower water add complexity, while Amaro Montenegro is splashed over as a float on top.

The Elephant Room

Paying homage to the Indian diaspora in Peru is Redefined, a savoury cocktail made with Pisco Quebranta that’s been infused with ghee and curry leaves that’s topped off with Pomegranate and fizzy grape.
