EDITION Hotels has tapped acclaimed Australian restaurateur and award-winning chef and author Josh Niland to helm the signature restaurant at soon-to-open The Singapore EDITION.

There’s going to be a new celebrity restaurant in town when The Singapore Edition finally opens. EDITION Hotels has announced a partnership with award-winning chef, author and restaurateur Josh Niland to helm the signature restaurant for The Singapore EDITION, its first hotel in Southeast Asia that is set to open in the heart of Singapore’s iconic Orchard Road shopping district.

Not familiar with Niland? ‘Niland is to fish what world’s most famous butcher Dario Cecchini is to beef‘, is probably best way for us to describe the pioneering Australian chef. Renown for his innovative approach to seafood, 34-year old Niland has been a strong advocate for sustainable and ethical fishing practices since opening his first restaurant Saint Peter in 2016 where he champions using every part of the fish – from head to tail – to minimise waste and maximise flavour.

Together with his wife and business partner Julie, he later opened multiple concepts including The Fish Butchery, a retail market concept selling sustainable fish, and Charcoal Fish, a beachside takeaway concept offering restaurant-standard fast food. Niland is also the author of award-winning cookbooks ‘The Whole Fish Cookbook’ and ‘Take One Fish’. Over the years he’s influenced chefs and diners around the world the way seafood is prepared, consumed, and appreciated.

As one would expect, the flagship restaurant helmed by Niland – one of the five restaurant and bar venues offered by the 204-room property – will be an ethically-sourced seafood concept. Diners can expect to experience Chef Niland’s passion for seafood, and – accordingly to the hotel – his yet-unnamed restaurant will “feature the finest ingredients from world-class producers, growers and artisanal suppliers to present a menu of fish cut to order, including rib on the bone, crown roasts and cutlets”.

This will be Niland’s first restaurant venture outside of Australia.
